2nd Avenue Japanese Cooking Class + Teriyaki Chicken Recipe

 

If there’s something I love doing aside from traveling, it’s learning new things so when I got invited for an exclusive cooking class by 2nd Avenue, I said yes right away. I don’t really know much about cooking, I just learn everything from youtube. To my surprise, we were assigned to cook / make Japanese dishes like teriyaki chicken, california rolls, sushi rice, Japanese fried rice and tempura. Yay! I’m still on brand. Haha! This is why people think my blog is all about Japan and not a personal one. But that’s OK!

The chicken teriyaki was sooo good despite my ugly plating so I’ll share the recipe. Hope we can all recreate it at home!

Chicken Teriyaki Recipe (serving 6 pax)

8 chicken thigh (deboned or buy boneless thigh in the supermarket) / save 1 pc bone for sauce

Chicken marinade ingredients:
1/4 cup Kikkoman soy sauce
2 tbsp sugar
1/4 cup mirin
2 tbsp sake
2 tbsp grated ginger
1/4 cup water
Teriyaki sauce:
2 cups water
1/4 cup Kikkoman soy sauce
1/4 cup mirin
2 tbsp sake
1/2 tsp hondashi
1/2 cup sugar
2 tsp cornstarch + 2 tsp water (optional)

PROCEDURE

Marinade:

  1. In a bowl, mix all marinade ingredients together until sugar is dissolved.
  2. Pour marinade on the chicken thigh and marinate for at least 30 minutes (maximum of 3 hours). Set aside.

To make Teriyaki Sauce:

  1. In a skillet, fry the chicken bones till brown.
  2. Add water, kikkoman, mirin, sake, hondashi, sugar to the chicken bones. Let simmer in the saucepan till sauce is thick and with a syrup-y consistency for 20-30 minutes. Thicken with cornstarch and water after 20 minutes of boiling.

To cook chicken:

    1. Remove chicken from marinade. Grill marinated boneless chicken thigh on a charcoal grill or electric grill.
    2. Slice chicken into 1/2 inch strips and pour teriyaki sauce over cooked chicken.

Everything is actually good (no bias because I kind of cooked it with the help of our chef of course) but my fave was chicken teriyaki. The show is hosted by world-renowned chef Gordon Ramsay as he puts aspiring young chefs through rigorous cooking challenges and dinner services at his restaurant Hell’s Kitchen located in Hollywood. He is known for his fiery temper, strict demeanor, and use of expletives. He often makes blunt and controversial comments, including insults and jokes about contestants and their cooking abilities.
